From Field to Bottle: The Craft of South African Agave Liqueur

Harvesting the Piña
Just like in Mexico, the agave plant in South Africa takes several years to mature, often reaching 10 to 20 years before it’s ready for harvest. Once the plant reaches maturity, the leaves are carefully removed to reveal the heart, or piña. However, instead of the blue agave used for tequila, South African producers commonly use the Agave americana variety, which thrives in the semi-arid conditions.
